I have an odd connection to peanuts. I worked in the food industry for a large peanut company. I have been to Plains, Georgia for a peanut festival. I have been in a Mr. Peanut costume. I have met Jimmy Carter, who has a peanut connection, too. I like peanuts, even boiled ones. It is not a stretch to get from liking peanuts to liking peanut butter. Great peanuts make great peanut butter and great peanut butter makes great peanut butter cookies.

How To Make Peanut Butter Cookies – Not Much Different Than Other Cookies

Peanut butter cookies follow a similar construct to other cookies. The wet ingredients are fluffed with the sugar and moistened with egg then the dry ingredients are added. One question you might have is – do I roll the dough in sugar before baking? That is up to you.

As you would expect, one of the main wet ingredients is the peanut butter, which is responsible for delivering on that peanut goodness. Any peanut butter will do – either homemade peanut butter or store bought. Even trying peanut butters that have been tinkered with is a great idea.

A peanut butter with dark chocolate or a peanut butter made with candied peanuts would be fun in a peanut butter cookie. The truth is though, to raise the peanut butter cookie to a more indulgent level, I would rather stick to a traditional cookie, but sandwich a rich peanut butter cream inside.

A peanut butter cream filling between peanut butter cookies is the peanut lovers greatest fantasy come true. To make a great peanut butter filling, take a page out of making a butter cream frosting. Peanut butter plus butter and powdered sugar is all you really need to make a good filling. You can sweeten it as you like with the sugar. A dash of vanilla is a worthy addition and, if you like salty sweet, this is a great place to add salt to taste. I do take steps to cut the richness (if that is even possible at this point) by layering the peanut butter filling with jam. A raspberry or cherry jam has a little more tartness and that works well.

Dry Ingredients
  1. 1 1/2 cups flour
  2. 1 teaspoon baking soda
  3. 1/4 teaspoon salt
Wet Ingredients
  1. 8 oz of your favorite peanut butter
  2. 1 cup brown sugar
  3. 1 stick of butter at room temperature
  4. 1 egg
  5. 2 tsp vanilla extract
  6. Sugar (optional)
For The Filling
  1. 4 oz peanut butter
  2. 1 stick of butter at room temperature
  3. 5 oz powdered sugar
  4. A jar of your favorite jam
Instructions
  1. Preheat the oven to 350 F.
  2. In a small mixing bowl, whisk together the flour, baking soda and salt.
  3. In a large mixing bowl, using a hand mixer, whip the peanut butter, butter, and brown sugar. Whip until smooth & creamy.
  4. Add the egg and vanilla extract. Continue to mix until well combined.
  5. With a fork, stir in the dry ingredients until well combined.
  6. Scoop and roll the dough into 1 inch balls.
  7. Roll the balls in sugar if you desire.
  8. Place the dough balls on a parchment lined baking tray.
  9. Using a fork or the bottom of a glass, press down on each ball of dough to flatten.
  10. Bake the cookies for 9-10 minutes.
  11. Cool on a wire rack.
  12. Using a hand mixer, whip filling ingredients. Spread the filling with a layer of jam between 2 cookies
  13. Serve.
