Easy Pasta Recipe – Pappardelle With Peppers and Chorizo

On a night where simple is needed, I turn to pasta. It really does not take much to make a great pasta dish. Many times, whether it is a pasta with a cream sauce or just a plain tomato sauce, the ingredient list is relatively short. Boiling up the noodles and tossing them into a sauce is relatively easy as far as cooking is concerned. Even making a fresh tomato sauce is not that hard. One of my favorite easy pasta recipes is to toss noodles with spicy sausage and peppers. It is a little different, but still easy to do.

By using chorizo, the recipe goes off the normal path just a little. I am a huge lover of italian sausage, but chorizo makes a nice change and adds a little extra spice to the dish. The peppers add a nice sweetness and balsamic vinegar adds a touch of tartness. As far as noodles go, I use the shape I have on hand. Sure, who doesn’t have a favorite like trotolle or penne? Mostly I go for the long noodles though, as I like to see the diners do a little slurping. I am not against slurping noodles, especially when there are kids at the table. I love it when a meal is tasty and entertaining.

Here is my easy pasta recipe for pappardelle with peppers and chorizo…(BTW it is great with a salad and crusty bread!)

Pappardelle with Chorizo and Peppers

Ingredients
  1. 1 lb of pappardelle pasta or noodle of your choice.
  2. 3 yellow, orange or red bell peppers
  3. 1 medium sweet onion
  4. 1 clove of garlic
  5. 10 cherry tomatoes
  6. 1/2 lb of chorizo sausage
  7. 2 tbsp of balsamic vinegar
  8. olive oil
  9. salt and pepper
  10. parmesan for sprinkling
Instructions
  1. Wash, de-seed and thinly slice the bell peppers.
  2. Peel and slice the onion in half then thinly slice the onion halves.
  3. Chop the garlic finely.
  4. Wash and cut the cherry tomatoes in half.
  5. Cube the chorizo. Remove any casing from the chorizo if desired.
  6. In a large, dry sauté pan, heat the chorizo over medium heat until it just begins to crisp and fat is rendered. Remove the chorizo from the pan leaving a tbsp of chorizo oil in the pan. If there is not enough oil, add a little olive oil.
  7. In the pan in which the sausage was cooked, sauté the onion, garlic and tomatoes until they become tender.
  8. Add the peppers to the pan and sauté until they just become tender.
  9. Add the balsamic vinegar and mix well. Cook for 10 minutes until the balsamic has evaporated and all the vegetables are tender. Season to taste with salt and pepper. Set the pan aside.
  10. Bring a large pot of water to boil. Cook the pasta al dente according to the manufacturer's instructions.
  11. Drain the cooked pasta and add it to the sausage and peppers. Toss well.
  12. Serve the pasta hot in a large bowl.
  13. Sprinkle with parmesan cheese before serving.
