Cherries jubilee might well be the most perfect dessert. Why? Because if there’s two things that a dessert should always be, it’s: rich in taste and simple to make. And cherries jubilee fits the bill. We’ve talked about cherries jubilee before when we wrote about classic fruit desserts, and why they’re so great. But now, we’re going to focus on one of those and why it’s the quintessential dessert.

Cherries jubilee was created around the late 1800s – or so it’s thought – by a chef (Auguste Escoffier) of Queen Victoria of England. She wanted a dessert for her Diamond Jubilee celebration, and this was created as a simple dessert to fit the occasion.

What is Cherries Jubilee?

Cherries jubilee is possibly the simplest dessert to ever exist, as it’s essentially just vanilla ice cream topped with a cherry sauce – simple, fresh, and delicious. However, instead of being just a simple cherry syrup topping, the cherries are flambeed.

This process of covering the cherries with liquor (in this case, a hearty rum) and catching the cherries on fire for a moment creates a deeper, more intense flavor so that you can really taste the cherries. It also caramelizes the sugar that’s in the pan, creating an almost caramel like sauce. Its both complex and simple at the same time, which makes it a whole lot of fun to savor after dinner.
