Thanksgiving is over, but that doesn’t mean you still don’t have a ton of leftovers in the fridge. If you’re like us, then you’ve got a mountain of turkey, stuffing, and cranberry sauce that you don’t know what to do with. Until now. These 3 quick leftover turkey recipes will help you use up all those leftovers (so that you don’t contribute to food waste!) Even better, they offer a range of flavors, so you don’t end up feeling like you’ve eaten the same meal 5 days in a row.

Leftover Turkey Recipes

Creamed Turkey and Biscuits

Similar to a chicken pot pie, but with a turkey substitute instead, this recipe uses leftover jus gravy (or broth) as a base for a creamy turkey and veggie combo. Whip up a batch of biscuits, and you’ve got a cozy meal for post-Thanksgiving relaxing with family.

Turkey Salad

A simple turkey salad can topped over lettuce; smeared on bread and made into a sandwich; or eaten with crackers. However you eat it, it’s simple, tasty and only takes about five minutes to make. This recipe uses mayo as an agent to mix the ingredients together, and keeps it simple with chopped hard boiled eggs and diced sweet pickles along with chopped leftover turkey. We like this recipe, as the sweet pickles give the turkey salad an extra little kick, but you can add in whatever other seasonings or veggies you like.

Thanksgiving Hot Pocket

The last of our leftover turkey recipes is a fun play on Hot Pockets, and who doesn’t appreciate a good throwback to the hazy days of childhood? This version only requires: two sheets of puff pastry; leftover turkey (shredded or diced); leftover stuffing; and leftover cranberry sauce. Start by laying out one layer of puff pastry dough on the bottom of a glass, rectangular baking dish. Next, layer the stuffing all along the top of the puff pastry dough. Next, spread the turkey on top of the dressing. And finally, top off the layers with your leftover cranberry sauce. Take the second layer of puff pastry and enclose all of the leftover Thanksgiving layers, making sure to pinch the two sheets of puff pastry together around the edges to seal it up. Bake at 425 degrees Fahrenheit for 10-15 minutes, or until the pastry dough puffs up and turns golden brown. Take it out of the oven, let it cool, and then cut it into slices. Enjoy!
