When I was a kid, one of the best parts of summer was watermelon. I am big watermelon fan. I very much like the fact that you can eat watermelon in a real devil-may-care way. Cut it into a huge slice and shove your face right into it until you hit the rind. You could never get a slice big enough. So what if your face gets sticky. The pink part was good, but a few bites of the white rind was tasty, too. Watermelon is best served outside where the juice can drip all over you and safely end up in the lawn. In truth, I always thought watermelon to be a monolith. Maybe you would catch it in a fruit salad, but you never thought about making watermelon salad. But then things change.

When I was in college I had a friend from Cordele , Georgia -the watermelon capital of the world. He never once mentioned anything about eating watermelon any other way except fresh off the rind. Then, one day, I was having dinner in a Greek place and what, to my surprise, was delivered to the table? Watermelon and feta cheese – together! On the same plate! What the…? Is that mint? With watermelon? And feta? What the…? Henceforth, watermelon monolith status went up in smoke. I don’t remember the name of the restaurant, but I do remember the watermelon. What was next – tomato and cilantro?

A watermelon salad is easy and delicious to make. Watermelon plus feta plus mint plus a nice squeeze of lime juice and a crack of fresh pepper is a great combination. This is a great summer salad that brings watermelon and feta to a new place, a delicious place. The saltiness of the feta brigs out different flavors in the watermelon and the mint is just great with both. We probably are not eating enough mint.

Ingredients
  1. 3 pounds of watermelon, in bite size cubes
  2. 1/2 pound of feta cheese,
  3. One small bunch of mint
  4. 1 lime
Instructions
  1. Cut the feta cheese into small cubes.
  2. Wash and finely chop the mint.
  3. Place the cubed watermelon in large bowl. Add the feta. Add the mint, about 2-3 tsp to taste.
  4. Squeeze the juice of the lime over the salad and toss.
  5. Season lightly with pepper.
  6. Chill the salad in the refrigerator.
  7. Serve cold.
