Eggnog is almost synonymous with Christmas time. It’s a seasonal drink and you only manage to find it in supermarkets sometime between Thanksgiving and Christmas, which is a shame because it’s such a tasty beverage. Usually made from a basic combination of eggs, milk, sugar, and cream, eggnog is just one of those perfect holiday treats.

The good news is that you don’t have to stop drinking it once the holiday season is over – so long as you know how to make eggnog on your own.

How to Make Eggnog

Eggnog always seems like a more complex process than it really is. Maybe it’s due to the fact that you’re heating up and whisking egg yolks into milk, which if done incorrectly, could cause foodborne illness like salmonella. However, if you follow the directions carefully and heat thing to the proper temperature, making eggnog is quite easy. Here’s how to do it.

Start by collecting the following ingredients: 4 cups of milk, 2 1/2 tsp of vanilla extract, 1 dozen eggs (you’ll only use the yolks), 1 tsp of ground cinnamon, 5 cloves, 1 1/2 cups of sugar, 1/2 tsp of nutmeg, and 4 cups of light cream.

Use a saucepan to heat milk, 1/2 tsp of vanilla extract, cloves and cinnamon over low heat for 5 minutes. Slowly bring mixture to a boil. While this mixture is coming to a boil, whisk 12 egg yolks and sugar in a separate bowl. Once the milk mixture is boiling, pour it slowly into the egg mixture and whisk the two together. Pour the entire mixture back into the saucepan and lower heat to medium high. Keep cooking over medium heat for 3 minutes, stirring the entire time to help keep the mixture from boiling over. Take eggnog off the heat and strain to get rid of the cloves.

Let the eggnog cool for an hour in the fridge, and then stir in the remaining 2 teaspoons of vanilla extract, light cream, and nutmeg (you can also add in some rum if you’d like to make this into an adult beverage). Stir well and serve cold.
